60 months on leees. A true Champagne lovers Champagne both in drinking and style. Fuller richer bodied, greater intensity & drive reflecting wonderful acidity and balance. Stewed white fruits, brioche, honey and vanilla underpinned by soft citrus notes. A stunning food wine especially with complex pork dishes, stronger fish like Barramundi and Coral Trout. A champagne to quietly savoured and enjoyed. When we want to really impress someone we would bring this little beauty out.
The Chardonnay grapes thrive in these four different climates; it all depends on the subtlety and balance of the grapes we select within each terroir to craft wines that are complex, mineral and rich.
Starts off with notes of white flowers and citrus zest that awaken the senses that are further enhanced by hints of vineyard peach and hazelnut. Flavours of fresh almonds and grapefruit are complemented by nuances of lily and vanilla on the finish. Energy and vivacity balance this rich wine that is reminiscent of the sea.
Seeking out wines with dense fruitiness as well as structure to allow for longer ageing periods led us to the Upper Valley terroirs for the finesse and freshness of their grapes, which are complemented by grapes from the Mediterranean and Autan terroirs for added intensity and body.
Black fruit (blackberry, blackcurrant) combined with sour cherry and raspberry on the Nose, Cherry flavours evolve toward peppery, mentholated notes. A hint of cedar rounds out the fruitiness. Silky texture with impressive length. Complex and fresh.

Premier Cru- Hautvillers, Champillon & Cumières
36 months on less, A great back story as this is Champagne created reflecting the three favourite grapes & vineyards of the Yann, his father Jean Luc and grandfather Guy. A tue testimony to the heritage of the domaine. Developed in a much more classic style of Champagne, it delivers typically a bracing backbone & structure, the acidity & freshness are evident. Lovely softness & elegance, bright citrus structure, great mouth weight & drinkability. Destined to become a classic for the domaine, this is our perfect go to aperitif Champagne.
